Most of you might be familiar with mexican corn on the cob...I basically took the same recipe subtracted the cob and added cherry tomatoes, lime juice, jalapenos, and green onions.
Be prepared to get hooked...
Ingredients:
- 1 large can of sweet corn
- 1 cup of cherry tomatoes; halved
- 1/2 of chopped green onions
- 1 whole jalapeno
- 1 cup of feta cheese
- 1 tbsp of butter; melted
- 1/2 cup of cilantro
- Dash of cayenne pepper
- 2 tbsp of olive oil
- 1 tsp of lime juice
- Salt and Pepper to taste
Directions:
- Pour whole can of sweet corn into bowl.
- Cut cherry tomatoes into halves, chop up green onions, jalapenos, and cilantro then put all contents into bowl.
- Crumble cup of feta cheese into bowl, then olive oil and finally the lime juice. Salt and pepper to taste.
