Plum Crumble

My first pie! Well my first pie on my own... I was definitely nervous because baking is not my forte but this is probably the best recipe for someone who does not bake often.

Ingredients:
  • 2 tbsp brown sugar
  • 1 1/2 tbsp plus 1 cup unbleached all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 6 purple plums, cut in half and pitted
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 beaten egg
  • 1/2 cup butter, melted

Directions:
  • Heat oven to 375 degrees, make sure to move a rack to the center so the plum crumble bakes evenly. 
  • Thoroughly mix brown sugar, 1½ tablespoons flour, ¼ teaspoon cinnamon and ground ginger. Add to plums and mix well. Arrange, skin side up, in ungreased, deep 9-inch pie plate.
  • Combine remaining sugar, baking powder, flour, cinnamon and salt. Mix well. Stir in egg. Then, using hands, mix thoroughly to produce little particles. Sprinkle over plums.
  • Drizzle butter evenly over crumb mixture. The butter has a tendency to roll down the topping and over the rim of the pie dish, so do this step carefully. Bake the crumble for 30 to 35 minutes. Remove from oven and cool for 10 minutes. 
  • Serve warm or refrigerate for up to two days or freeze well covered. If reheating, bring to room temperature then heat up in oven at 300 degrees. Best served with ice cream!

Roasted Radishes with Rosemary & Feta

Hey there and happy Monday! Its been quite some time since I posted anything on here and I am ready to get back into action. With summer in full swing and our weekends packed with plans...its been easy to slip away from the normal posts. 

I decided to post something I've always wanted to try making myself and  was happy I found it to be easy to make, healthy, and perfect to use as a side dish or a quick easy meal. 



Ingredients:
  • Handful of radishes; washed and cut in half
  • Fresh rosemary sprig
  • crumbled feta
  • 1 tbsp of olive oil
  • 1 tbsp of unsalted butter
  • salt and pepper to taste

Directions:
  • Preheat the oven to 425 degrees.
  • Put halved radishes into mixing bowl and drizzle with olive oil and pinch of salt.
  • Place on a baking sheet and bake for 20 minutes. 
  • While radishes are in the oven; chop up rosemary and mix up with feta. Put aside till radishes are done baking. 
  • Take out the radishes and leave the oven on - toss the radishes with tablespoon of butter. Place back into the oven for another 10-15 minutes...I left mine in longer because I wanted them more crispy. 
  • After 10-15 minutes; take out the radishes and let them cool for 5 minutes. Once cooled toss them with feta mix and you are all finished!
