Tuna Tartare

Tuna tartare just sounds fancy doesn't it?! Some of my girlfriends joke around that part of the reason I make this recipe is because it's fun to say...they are definitely right.

Grab a few of the fresh ingredients listed below and follow the quick directions for a crowd pleasing appetizer. This recipe is best when eaten the same day it was made.

Ingredients:
  • 1 fresh tuna steaks (you can typically find this near the deli meats section)
  • 3 tbsp  olive oil
  • 1 limes, zest of, grated
  • 1cup freshly squeezed lime juice
  • 2 teaspoons wasabi powder or creme...I've used minced horseradish as well
  • 2 tbsp soy sauce
  • 2 tbsp kosher salt
  • 1 tbsp fresh ground black pepper
  • 1 bunch green onions; chopped
  • 1 large minced fresh jalapeno peppers, seeds removed
  • 1 ripe Hass avocadoes
  • 1 tbsp toasted sesame seeds

Directions:
  • Cut the tuna into 1/4-inch dice and place it in a large mixing bowl.
  • In a second bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, salt, and pepper.
  • Pour over the tuna, add the green onions and jalapeno, and mix well.
  • Cut the avocados in half, remove the seed, and chop into 1/4 inch cubes
  • Carefully mix the avocado into the tuna mixture; so that the lime juice covers them. Once you drizzle the lime juice on the avocado it will prevent them from browning.
  • Add the toasted sesame seeds and allow the mixture to sit in the refrigerator for at least 1 hour for the flavors to blend.
  • Serve on crackers of your choice.

Parm Basil Stuffed Mushrooms

Stuff, drop, and roll...that easy. These lil' pups are perfect for a party appetizer or an easy snack..ahem fancy snack. yes sir.

All you need is 30 minutes and these ingredients...serving size depends on number of mushrooms. I used five mushrooms so used about a 1/4 cup of basil and 1/4 cup of parmesan.
  • Mushroom
  • Shredded parmesan
  • Fresh basil
  • 2 cherry tomatoes; cut in fourths
  • Uncooked bacon
Directions:
  • Preheat oven to 350 degrees.
  • Wash mushrooms and pull out stems.
  • Cut tomatoes into fourths and put aside.
  • Blend parmesan and fresh basil in blender (or magic bullet) till its finely grated.
  • Stuff mushroom caps with tomatoes and parmesan basil blend.
  • Cut bacon strips into halves and wrap around stuffed mushrooms.
  • Place onto foil covered baking pan. If any of the bacon grease drips it will smoke up instead the oven...turn on the stovetop vent to prevent the room from getting smoky.
  • Bake for 15 minutes or until bacon starts getting crispy.
  • Take them out of the oven and let them cool for 3-5 minutes before serving.
