Homemade Olive Oil & Oregano Croutons

To make croutons, all you need is some bread, olive oil and seasoning. What bread, oil and seasoning you choose will determine how your croutons taste and look. My favorite bread to use is a day old multi-grain bread. This bread looks awesome when you tear it into bite size pieces...by tearing the bread it makes it look more authentic vs. processed. You can use as many pieces of bread as you'd like..depending on if you want to save some for later or just make enough just for your specific meal.  If the bread is too hard to cut but is still good to use, just pop it in the microwave, wrapped in a damp paper towel, for about 10-15 seconds to soften it up.


Instructions:
  • Preheat oven to 400 degrees.
  • Tear the bread up into bite size pieces. 
  • Use two tablespoons to 2 cups of bread pieces. Sprinkle seasoning onto bread mixture (you can use any other seasoning you like...for example, basil, thyme, rosemary, or garlic powder. Don't forget to sprinkle salt and pepper regardless of what additional spices you use).
  • Toss pieces onto baking sheet and bake for 15-20 minutes or until crispy.

I like to use my croutons for a caesar salad but you can use it for any kind of salad..OH M GEEE!! So yummy.

Zesty Cucumber Salad

Besides peeling the cucumber this was the yummiest and quickest salad I've ever made...I realize I've said that before but no joke this recipe took me less than five minutes!

A salad with a zing makes a perfect recipe to use as a side with a main course or simply by itself.



Ingredients:
  • Cucumber
  • 1/2 bunch of green onion
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 tsp cayenne pepper

Directions:
  • Peel cucumber and slice cucumber into thin pieces.
  • Chop green onions 
  • Mix all ingredients all together and make sure spices, oil, and lemon cover cucumbers. 
  • Enjoy!

Mason Jar Salad

These are super fun to make and easy to prep for the week... I would suggest not making more than 2 or 3 ahead of time since the veggies tend to wilt. 

Be creative with colorful veggies and use quinoa for protein...splash your favorite vinaigrette or use a simple lemon olive oil sea salt dressing right before you eat your salad for lunch.

15 minute Tabouli Salad

My favorite recipes are ones that have ingredients that can be easily substituted for others. Like Tabouli salads for example! Classic Tabouli salad is made with wheat bulgur (which doesn't always need to be cooked), parsley, tomatoes, and a garlic mint lemon dressing. I've even seen some recipes incorporate feta cheese...my favorite. Yum!



Ingredients:
  • 1 cup dry bulgar
  • 1/2 cup green onion
  • 2 cloves garlic, press or chopped
  • 3 cups minced fresh parsley
  • 1/2 minced fresh mint
  • 1 medium tomato, chopped
  • 1/3 english cucumber
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
Directions:
  • Place 1 cup bulgur and salt to taste into boiling water. Let bulgar cook for 15-20 minutes (stirring occasionally) until liquid is mostly absorbed. Drain remaining liquid but there should not be much. 
  • While bulgar is cooking mince garlic, parsley, and mint. Then chop up tomato, green onion, cucumber. 
  • Combine all ingredients then mix well with olive oil, lemon juice. Salt and pepper to taste.

Cucumber Salad with Feta

One of my go-to side recipes is this cucumber salad with crumbled feta cheese. It's simple, healthy, and lasts for a couple days after you make it...perfect for a dinner side and then lunch the next day. 

Plus, for all you weight watcher fans out there this recipe is only 3 points...winning!








Ingredients:

  • Half a cucumber
  • 1 large beefsteak tomato
  • 1/2 bunch of green onions
  • 1/4 red onion
  • 1/2 jalapeno, pitted
  • 3 tbsp of crumbled feta
  • 1 tsp salt
  • 1tsp pepper
  • 2 tbsp of olive oil

Directions:

  • Chop up all vegetables into small pieces
  • Add salt, pepper, feta, and olive oil into vegetables and mix up all ingredients

All finished!

Holy cow... I think that only took me like 3 minutes.
