My favorite recipes are ones that have ingredients that can be easily substituted for others. Like Tabouli salads for example! Classic Tabouli salad is made with wheat bulgur (which doesn't always need to be cooked), parsley, tomatoes, and a garlic mint lemon dressing. I've even seen some recipes incorporate feta cheese...my favorite. Yum!
Ingredients:
- 1 cup dry bulgar
- 1/2 cup green onion
- 2 cloves garlic, press or chopped
- 3 cups minced fresh parsley
- 1/2 minced fresh mint
- 1 medium tomato, chopped
- 1/3 english cucumber
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Directions:
- Place 1 cup bulgur and salt to taste into boiling water. Let bulgar cook for 15-20 minutes (stirring occasionally) until liquid is mostly absorbed. Drain remaining liquid but there should not be much.
- While bulgar is cooking mince garlic, parsley, and mint. Then chop up tomato, green onion, cucumber.
- Combine all ingredients then mix well with olive oil, lemon juice. Salt and pepper to taste.
