Sauteed Red Cabbage Side Dish

I literally have nothing in my fridge...again (hence my empty fridge picture below).  Although, I doooo randomly have a couple granny smith apples and half of a red cabbage which will make one of my favorite (and healthy) side recipes...it also tastes amazing layed on top of grilled brats!

Follow the pictures and step-by-step instructions for a yummy side or brat topping. 



Ingredients:
  • 1 white onion, thinly sliced
  • 1 tbsp coconut oil
  • 3 cup red cabbage, about half a head, thinly sliced
  • 3 tbsp apple cider vinegar
  • 1 tbsp salt
  • 1 tsp of dried rosemary
  • 1 cup granny smith apple (green apple), chopped into matchsticks

Instructions:
  • In a large pan, sauté the onion in coconut oil. When it is mostly translucent, add the cabbage and cook until it begins to soften.
  • Add the vinegar and rosemary salt blend, and allow the cabbage and onion mixture to cook until everything is softened.
  • Add the apples, and cook them until soft. Add a splash of vinegar if the mixture becomes too dry.
