Minnesota weather is finally warming up and time for one last warm winter meal (well I hope this is the last one...knock on wood)
Ingredients:
- 6 cups of water
- 2 stalks of celery
- 1 large carrot
- 1 yellow onion
- 2 jalapenos, whole and not pitted
- Whole chicken breasts; I used leftover rotisserie savory chicken (1/2 chicken remaining) and put the whole chicken in the water to make chicken broth.
- Handful of fresh thyme
- 2 tsp Mrs. Dash Original Blend seasoning
- 2 bay leaves
- 3 tbsp salt
- 3 tbsp pepper
Directions:
- Boil water then turn down to medium heat; add chicken breasts (or leftover rotisserie chicken) with salt and pepper.
- Cook with chicken on medium heat for 1 hour. If you used a the rotisserie chicken make sure to pull out chicken cage and pick out the chicken off the bones. Toss back into the water.
- Add the remaining ingredients into water and cook on medium heat for 1 more hour.
