Shout out to my sister, Nathalie, who is the best vegetarian cook out there! While visiting her in Los Angeles, she whipped up this awesome recipe for breakfast...it was so beautiful and delicious, naturally I had to take pictures of it and share with all of you.
Ingredients:
- 1/2 cup multi colored quinoa
- 1 cup kale
- Salt & pepper, to taste
- 1/4 cup beets
- 1/4 cup onions
- 1 tbsp lemon
- 1 egg
- 1 tbsp olive oil
Instructions:
- Cook quinoa in hot water. For best results follow instructions on packaging.
- Chop onion and saute in olive oil; throw kale in for a few minutes to soften up. Once onion browns put to the side in a bowl.
- Boil 1 beet till soft then chop up 1/4 of beet for recipe (small cubes). Throw into kale and onion mix.
- Next you will need to poach an egg. Typically you can poach an egg in a small pot with vinegar and water...recently I found a fool proof way to poach eggs in a microwave. Check out Heather @French Press and learn to poach eggs in a microwave. Super easy!
- Mix quinoa, onion, beets, and kale together. Place poached egg on top and enjoy.
