Sunny side ups are great to incorporate into meals because the second you cut into the yolk the gooey goodness spreads all over your food. Heck yeah!
This recipe was one I created on a whim and I was pleasantly surprised... basically these were the last three ingredients I had left in the fridge and it turned out perfectly.
Ingredient:
- 1 egg
- 1/2 cup brussel sprouts
- 1/2 cup cherry tomatoes
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup of water
- 2 tbsp olive oil
- Boil brussel sprouts for 3-4 minutes and drain. Cut into halves and put to the side.
- In one pan heat up olive oil and water. Put tomatoes and brussel sprouts into hot pan and cover. Cook tomatoes till they pop (They will look wilted) and brussel sprouts brown on the outside. Salt and pepper to taste.
- While tomatoes and brussel sprouts are cooking heat olive oil in the second pan. Once pan is hot crack egg into pan and cover with lid... the lid will cook the egg from the top through. Cook till edges of egg white brown.
- Put brussel sprouts and tomatoes in a bowl and put sunny side egg on top. Once you cut into the egg the yolk will cover the veggies. Salt and pepper eggs/veggies to taste (if needed).
