Spicy Chicken Noodle Soup

Hello! Hola! Salut! 

Minnesota weather is finally warming up and time for one last warm winter meal (well I hope this is the last one...knock on wood)

This recipe below will clear your sinuses and have you coming back for seconds. Double this recipe for leftovers all week long.




Ingredients:

  • 6 cups of water
  • 2 stalks of celery
  • 1 large carrot
  • 1 yellow onion
  • 2 jalapenos, whole and not pitted
  • Whole chicken breasts; I used leftover rotisserie savory chicken (1/2 chicken remaining) and put the whole chicken in the water to make chicken broth. 
  • Handful of fresh thyme
  • 2 tsp Mrs. Dash Original Blend seasoning
  • 2 bay leaves
  • 3 tbsp salt
  • 3 tbsp pepper

Directions:
  • Boil water then turn down to medium heat; add chicken breasts (or leftover rotisserie chicken) with salt and pepper. 
  • Cook with chicken on medium heat for 1 hour. If you used a the rotisserie chicken make sure to pull out chicken cage and pick out the chicken off the bones. Toss back into the water. 
  • Add the remaining ingredients into water and cook on medium heat for 1 more hour.
