Pickling your own Jalapenos

Over the past year it's safe to say I've become a huge jalapeno fan. There is nothing better than adding the kick of jalapeno into any recipe...especially pickled jalapenos. Oh wait, pickled jalapenos on a Bahn Mi sandwich...on braised pork tacos...or on crackers with goat cheese! Dang...so many options. 

You can pickle jalapenos in three easy steps:
  1. Slice jalapenos, garlic, and onions...I added carrots for color. 
  2. Heat white vinegar, peppercorns and salt. Heat till salt dissolves then simmer. 
  3. Put sliced jalapenos, garlic, and onions with pickling liquid into mason jar then refrigerate.
After I finished with the jalapenos I used the same three steps listed above but used green beans/radishes instead.
