I can eat these little golden fries all day long...but then I would probably look like a sumo wrestler...
Ingredients:
- 2 medium red potatoes, scrubbed, (leave skin on)
- ¼ cup olive oil
- 1/2 cup grated Parmesan
- 1 teaspoon Thyme
- 1 tablespoon Italian seasoning
- Preheat oven to 425 degrees.
- Cut potatoes into wedges.
- Put into a large bowl
- Pour the olive oil, Parmesan and seasonings onto the potatoes.
- Stir until all wedges are coated.
- Lay on covered baking sheet with aluminum foil (dull side up)
- Bake for 30 to 40 minutes until golden brown and crispy.
- Cool for a few minutes before serving.
- Serve with a favorite dipping sauce, like ketchup or spicy mayo (mayo with Sriracha)
