Mango Sriracha Baked Cauliflower Bites

Oh man, I sure have been on a Sriracha kick...excuse me for those that can't handle their spice! I've actually heard adding more spice into your diet speeds up your metabolism....BRING ON THE SPICE!


Ingredients: (3 parts)

Batter:

  • 1 cup water
  • 3/4 cup flour
  • 1 tsp each of garlic powder
  • 1/2 tsp cayenne
  • A very generous dash of black pepper and salt

Spicy Mango Jam (makes 1 cup):

  • Mango - 1 big (chopped roughly) - comes to 1.5 cups
  • Sugar - 1/4 cup
  • Lemon juice - 1 tbsp
  • 1 jalapeno; pitted and chopped

Mango Sriracha Glaze:

  • 1 cup spicy mango jam (listed above)
  • 1/4 cup Sriracha sauce
  • 1 Tbsp or more hot sauce or to taste (I used louisiana hot sauce)
  • a generous pinch of garlic powder
  • 1/4 tsp ginger powder
Topping (optional):
  • sesame seeds

Directions:

  • Preheat the oven to 450 degrees F. Chop the cauliflower into 1.5 inch pieces. Mix everything under batter in a bowl until smooth and thick enough batter that can coat the cauliflower pieces well (add more flour if needed). Place cauliflower in the batter and place on parchment lined baking sheet (I used foil because I ran out of parchment paper). Bake for 20 minutes.
  • While cauliflower is baking, peel mango and throw into magic bullet with lemon juice, chopped/pitted jalapeno, and brown sugar. Blend till its basically smooth...expect for it to have a little bit of a textured consistency. 
  • Once jam is finished combine it with all the ingredients listed under mango Sriracha glaze in a pan. Heat on medium heat for 10-15 minutes; stirring frequently.
  • Take out baked cauliflower pieces and throw into a mixing bowl. Take mango Sriracha glaze and toss over cauliflower pieces. 
  • Once cauliflower pieces are covered with glaze, place pieces on a serving dish and sprinkle sesame seeds on top. 
  • Enjoy!
